Set aside till required. Heat the butter in a pan. Add the onion paste and saute till it is light brown in color and the oil starts separating from the masala. Add the red chili powder and tomato puree, saute, add the cumin powder, all spice powder and 1 cup of water. Stir to combine and let the butter masala gravy simmer for 10 to 15 minutes over medium heat or till it thickens. Add the cream, salt and cottage cheese to it. Mix gently and simmer 2 minutes. Sprinkle crushed fenugreek leaves over. Serve hot with naan or kulchas. Real Cheddar Cheesecake: Ingredients: Milk 100 ml Caster sugar 100 gm Flour 100 gm Eggs, separated 6 Butter 7 tbsp Salt a pinch Grated cheddar cheese ½ cup Method: In a saucepan heat milk, butter and cheese. Stir till all has melted and remove from fire. Beat the egg whites with sugar till soft peaks form. In another bowl beat the yolks and add the flour, gradually add in the cooled milk mixture. Fold this to the egg whites. Pour mixture in a greased and lined 8-inch tin. Fill a tray with warm water and place the tin in the tray. Bake at 180 degrees c for 30 minutes, or until done.'
